Public Hearings Pres 19-295 Application for the Hotel/Restaurant License for Serve Eatery LLC dba Serve at 12433 E 104th Pl Unit 102 Commerce City Page 1 Liquor License Authority Meeting Minutes - Final June 4, 2019 Appearing: Jennifer McCraw, on behalf of the applicant Joshua McCraw, on behalf of the applicant Carolyn Johnson, petitioner Brian Swann, on behalf of the city Jennifer McCraw testified to the business model, service, future charity endeavors, training, and plans to open. The hearing officer presented questions about the fencing and patio area, later requesting an amended diagram, showing dimensions, directionals and the specifics of the patio area. The hearing officer also requested minor changes in name inconsistencies in the application. Josh McCraw testified to his particular experience in the hospitality industry and management. Carolyn Johnson reported on the petition evidence and results as well as other liquor licenses held in the area. The hearing officer approved the issuance of the license on the following conditions: An approved certificate of occupancy, successful inspections by fire, police and other applicable city departments, and continued compliance with all city and state rules, regulations, codes and laws. Also requested was an amendment fo 14C on the applicants' Individual History Records, a revised diagram, any applicable changes in the trade name within 30 days. Pres 19-298 Application for the New Hotel/Restaurant License for ECP Enterprises LLC dba El Coco Pirata located at 5411 Quebec St Appearing: Refugio Perez, on behalf of the applicant Francisco Cuevas, on behalf of the applicant Tina Scott, petitioner Brian Swann, on behalf of the city Kanitdna Chittivej, building owner Attorney Perez tesitified to the business model and experience of the applicant, high demand for the restaurant type, ambiance, hours, employees, training and serving standards. Mr. Cuevas made a correction to Attorney Perez's testimony that he had 1 prior violation at a Greeley location. Mr. Cuevas testified to his experience in the industry, cuisine, business environment, clients and lack of criminal history. The hearing officer asked about revisions to the diagram, occupancy, local liquor code training, food to beverage sales and supplemental financial info. Mr. Perez made closing statements. Ms. Chittivej made statements to the character of the applicant and their working relationship.
